Chocolate Covered Strawberry Coconut Hearts

Ingredients

  • 1/4 cup coconut oil
  • 1/2 cup strawberry jam I used Costco's organic
  • 2 Tbsp chia seeds optional
  • 1 cup shredded coconut unsweetened

Chocolate Glaze

  • 2 Tbsp coconut oil
  • 1/4 cup honey
  • 1/4 cup cocoa powder
  • dash salt
  • 1/2 tsp vanilla

Instructions

  • Combine base ingredients and press into candy molds (heart shapes are cute) or shape into balls.
  • Freeze until set, about one hour.
  • Combine glaze ingredients over low heat until smooth.
  • Remove from heat.
  • Dip frozen Strawberry Coconut Hearts into melted chocolate mixture until covered.
  • Set on a plate and return to freezer for 15 minutes to solidify.
